SIMPLE KIMCHI FRIED RICE BOWL

Upgrade your fried rice with kimchi! It’s packed with gut-friendly probiotics formed during the fermentation process and acts as an anti-inflammatory ⚡️


Ingredients: 

150g uncooked rice

1 white onion

1 green chilli

4 garlic cloves

250ml chicken stock

3 tbsp kimchi 

1 tbsp soy sauce 

2 eggs 

Lots of veggies, I opted for an edamame, broad bean & pea mix!


Method:

Step 1: To a frying pan on a low heat add the white onion, garlic and chilli

Step 2: Once softened add the dry rice, cook these together for 2 minutes

Step 3: Add the chicken stock and veggies, cover with a lid for 20 minutes whilst the rice cooks

Step 4: Push the rice to one side, pour in the eggs and scramble

Step 5: Mix the egg into the rice, adding the soy sauce and kimchi

Step 6: Remove from the heat and serve with sesame seeds
